Meatballs and Sauce – RAW

Yummy! Greatest invention ever!

Raw meatballs with raw Italian tomato sauce.

Very easy takes hardly any time thanks to my blender!

“Meatballs”

1 cup raw almonds soaked overnight and drained

1 cup pecans

grind up in processor and add

1 peeled carrot

1/2 small purple onion

small handful parsley tops

1 sprig rosemary, leaves removed from stem.

several fresh sweet basil leaves

garlic, either fresh or powder

cajun seasoning to taste or salt

juice of one small lime or 1/4 lemon

dash mushroom soy sauce

1 t. olive oil

grind nuts first and add rest of ingredients.  blend until all is starting to stick together.

make round balls and set on a screen for dehydration. (you can eat them right away if you wish or dehydrate for several hours until dry to touch on outside.

Sauce:

I used my blender for this.  I quartered about 10 or more tomatoes.

1 small Zucchini cut in about 6 pieces

1 sweet pepper- remove seeds cut into several large pieces

1 small hot red pepper  (to taste) remove seeds

fresh garlic or garlic powder

1 handful parsley tops

1 handful basil

2 sprigs of rosemary

4 or 5 dashes of mushroom soy sauce

2-3 t. lemon juice

1-2 t. apple cider vinegar

drizzle of honey to taste

1 T. olive oil or more to taste

1-2 t. salt to taste or you could use cajun spice if you want more spicy flavor

start your blender slowly until the tomatoes are starting to form water and then pulse until all is blended.  blend for about 20 seconds more.

let sit one hour to let flavors blend.  I couldn’t wait that long 🙂

Pour the sauce over the “meatballs”

If you are eating raw, you can make raw pasta with zucchini or other squash.

You could do several things with these meatballs as well.

You could make gyros, swedish meatballs, vietnam “nam nuang”, wrap in sushi or lettuce etc…

you could also use other sauces such as brown or swedish gravy, peanut sauce, falafel sauce etc…

Sky is the limit on these “meatballs!”  Delicious!  I promise.

Rosemary Biscuits

Rosemary biscuits

2 c. flour
2 t. sugar
1 T. Baking pwdr.
1/4 t salt
1/2 cup butter cut up
2 T. rosemary fresh or 2 t. dried
1 egg
3/4 cup half and half
mix dry ingredients. cut in butter. make a well and add egg and milk. Stir. Roll out on floured board. sprinkle with flour. gently knead. cut rounds 1/2 inch. thick
450 F for 12 min or till golden
