Baked Fish Burgers

Use fillets frozen or fresh.

Dry well.
place on a well oiled cookie sheet (olive oil is best)
sprinkle fillets with a little more olive oil
cajun spice,
italian herbs
lime juice (must be fresh)
Bake for 10 min, or until fish flakes easily.
you can also tell if the fish is done by looking for the milky white water coming out of the middle of the fillet. Then you know it is done.
If you like your fish more dry, you can drain the pan and turn the fish over and cook until just browned on top.
Serve on a hamburger bun with all the fixings or try it with a handsome helping of coleslaw on top.
Buns can be toasted or grilled beforehand if desired.
Tartar Sauce:
1 cup Mayo
1 T. Mustard
1 T. Ketchup
1. T. Olive oil
pinch garlic pwdr
pinch ginger powder
cajun spice or cayenne pepper powder
(relish is optional)
